Chef Moshe Basson: “The Eucalyptus Cookbook”
October 15 • 4:00 pm - 5:00 pm
Join us for a Bible-to-table cooking demo, tasting, and conversation with Moshe Basson, legendary Israeli chef of Jerusalem’s top-rated The Eucalyptus. Both his restaurant and new cookbook, “The Eucalyptus Cookbook,” explore Basson’s uniquely modern interpretations of Biblical cuisine.
Situated in the Artist Quarter a stone’s throw away from the magnificent walls of old Jerusalem and David’s Tower, The Eucalyptus is one of the most memorable restaurants one can visit. Its charismatic, award-winning chef, Moshe Basson, is sought-after for his creative take on traditional recipes made with the spices, herbs, and ancient wild edible plants grown in the surrounding hills of Jerusalem and Judea. For many, a visit to Israel culminates at The Eucalyptus, where the dynamic Basson imparts incredible stories and his knowledge of the Israeli slow-cooking movement and edible plants while courtyard guests savor his fascinating dishes. SJCC is thrilled to host Chef Basson on his first cookbook tour. Tasting and additional cookbook sales + signing after the event.
Part of our Israel@75 series and the 2023-24 Chew on This Speaker Series: authors, thought leaders, and chefs to feed the mind, body, spirit, and palate.

About the Guest
Moshe Basson is an internationally renowned master chef specializing in Israeli-Biblical cuisine. He has received accolades as an ethno-botanist, expert in the Mediterranean diet including specialty diets such as veganism and Jainism, heritage and wild foods activist, storyteller, food historian, folklorist, and restaurateur. In 1986, after serving as an officer in the Israeli Defense Forces, working as personnel manager in an international hotel, and founding a business growing exotic edible plants, Basson joined his brother who had taken their old family home and converted it into a homestyle restaurant built around a eucalyptus tree that Moshe had planted as a child. This he transformed into his now-famous restaurant, The Eucalyptus, renowned for Moshe’s “Land of Israel” cuisine, using ingredients mentioned in the Bible and collected from the surrounding Jerusalem hills.
The Eucalyptus is one the most reviewed restaurant in Israel and the award-winning Basson is a regular guest on local and international radio and television programs, including Netflix’s “Stories of a Generation with Pope Francis.” His efforts in renewing ancient foods have been applauded all over the globe and he received knighthood as Cavaliere de la Republica by the Italian government for these efforts.
